    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar with a pinch of salt. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Spicy Tuna Mixture

    In a bowl, combine the diced bluefin tuna with sriracha sauce and mix well until the tuna is evenly coated.

    Assemble the Rolls

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge. Add a line of the spicy tuna mixture and a few julienned cucumber pieces across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you while applying gentle pressure. Roll until you reach the bare edge of the nori. Moisten the edge with a little water to seal the roll. Repeat with the remaining nori sheets and filling.

    Slice and Serve

    Using a sharp knife, slice each roll into 6-8 pieces. Sprinkle with sesame seeds and serve with soy sauce and wasabi on the side.
