Smoked Red Pepper Soup Recipe

Soup Preparation

    Prepare the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute.

    Add the Peppers and Broth

    Add the smoked red peppers to the pot and stir well. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth.

    Finish with Coconut Milk

    Stir in the coconut milk, salt, black pepper, and smoked paprika. Heat through for an additional 5 minutes.

    Serve

    Ladle the soup into bowls and garnish with fresh basil. Serve hot with sourdough crisps.
