Charred Pickled Gem

Method

Prepare Short Rib

    Season and Sear

    Preheat your oven to 300°F (150°C). Season the beef short ribs with salt and black pepper. Heat vegetable oil in a large oven-safe pot over medium-high heat and sear the short ribs on all sides until browned.

    Add Flavor

    Stir in the red curry paste and cook for another minute. Pour in the coconut milk, fish sauce, brown sugar, and lime juice. Bring to a simmer.

    Cook

    Cover the pot and transfer it to the oven. Cook for about 3 hours or until the meat is tender and falling off the bone.

Prepare Charred Pickled Gem

    Pickle the Lettuce

    In a saucepan, combine rice vinegar, water, sugar, salt, black peppercorns, and mustard seeds. Bring to a boil, stirring until sugar and salt dissolve. Remove from heat and let cool.

    Pickle the Lettuce

    Cut the gem lettuce in half and place it in a jar. Pour the cooled pickling liquid over the lettuce. Seal and refrigerate for at least 1 hour.

    Char the Lettuce

    Preheat a grill or grill pan. Remove the pickled lettuce from the jar and grill each half for about 2-3 minutes until charred.
