    Prepare the sushi rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to the rice cooker's instructions or bring it to a boil and then simmer covered for about 20 minutes until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

    Prepare the salmon

    Slice the fresh salmon fillet into thin pieces, about 1/4 inch thick. Make sure to use a sharp knife for clean cuts.

    Form the nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of salmon on top of the formed rice.
