Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice using a spatula. Let the rice cool to room temperature.

Prepare the Salmon
Slice the fresh salmon fillet into thin pieces, about 1/4 inch thick. You should have enough slices for 2 pieces of nigiri.

Shape the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of salmon on top of the rice.

Serve
Serve the salmon nigiri with a small amount of wasabi and soy sauce on the side. Optionally, cut the nori sheet into strips and use it to garnish.
