Roasted Celeriac Dressed Ham Hock Recipe

    Prepare the Celeriac

    Preheat the oven to 200°C (400°F). Peel the celeriac and cut it into wedges. Toss the celeriac with olive oil, salt, and black pepper.

    Roast the Celeriac

    Spread the celeriac wedges on a baking tray and roast in the preheated oven for about 30-35 minutes, or until golden and tender.

    Cook the Ham Hock

    In a large pot, place the ham hock and cover with vegetable stock. Bring to a boil, then reduce to a simmer and cook for approximately 1.5 to 2 hours, until the meat is tender and easily pulls away from the bone.

    Prepare the Dressing

    While the ham hock is cooking, finely chop the garlic and parsley. In a bowl, mix the garlic, chopped parsley, lemon juice, a pinch of salt, and a drizzle of olive oil to taste.

    Combine and Serve

    Once the ham hock is cooked, remove it from the pot, shred the meat, and serve it with the roasted celeriac. Drizzle the parsley dressing over the top before serving.
