Wash the crosnes thoroughly under running water to remove any dirt. Trim the ends and set aside.

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the shallots and garlic, sauté for about 3-4 minutes until softened.

Add Crosnes and Liquids
Stir in the crosnes, white wine, vegetable broth, thyme, salt, and black pepper. Bring to a simmer and cook for about 15 minutes, or until the crosnes are tender.

Reduce the heat and stir in the heavy cream. Allow the ragout to simmer for an additional 5 minutes. Adjust seasoning if necessary.

In a separate skillet, melt the remaining tablespoon of butter over medium heat. Carefully crack the duck eggs into the skillet and cook until the whites are crispy and golden but the yolks remain runny, about 3-4 minutes.
