    Prepare the Rabbit

    In a large pot, heat olive oil over medium-high heat. Season rabbit pieces with salt and pepper, then brown them in batches until golden. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.

    Simmer the Rabbit

    Return the rabbit to the pot, and pour in the chicken stock and white wine. Add thyme and bay leaves. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the rabbit is tender.

    Prepare the Chutney

    While the rabbit is cooking, in a separate pot, combine pears, finely chopped onion, brown sugar, apple cider vinegar, cinnamon stick, star anise, and cloves. Cook over medium heat until pears are soft, about 20 minutes. Season with salt and remove spices.

    Serve

    Once the rabbit is tender, remove from heat. Serve the rabbit in a pot with a generous spoonful of mulled pear chutney on top.
