Prepare the Filling
In a mixing bowl, combine the ground pork, chopped kimchi, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch to seal tightly. Repeat until all filling is used.

Cook the Gyoza
In a non-stick skillet, heat a little oil over medium heat. Arrange the gyoza in a single layer and fry for about 2-3 minutes until the bottoms are golden brown. Add 1/4 cup of water to the skillet and cover immediately. Steam the gyoza for about 5-6 minutes until cooked through.

Serve
Serve the gyoza hot with a dipping sauce made from yuzu juice and shichimi togarashi (Japanese seven spice).
