Panettone
Method
Preparation
- 1
Prepare the Dough
In a small bowl, dissolve the yeast in warm milk. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour, sugar, and salt. Make a well in the center, and add the yeast mixture, softened butter, eggs, and vanilla extract. Mix until a dough forms.
- 2
Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Incorporate the candied orange peel and raisins during kneading.
- 3
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 2 hours or until doubled in size.
- 4
Shape and Second Rise
Punch down the dough and shape it into a ball. Place it in a panettone mold or a tall round cake pan. Cover and let it rise for another hour.
- 5
Bake
Preheat the oven to 350°F (175°C). Bake the panettone for about 40-50 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Let it cool completely.
- 6
Prepare the Coffee Whipped Cream
In a mixing bowl, whip the heavy cream and sugar until soft peaks form. Gradually add the coffee and continue whipping until stiff peaks form.
- 7
Serve
Slice the cooled panettone and serve with the coffee whipped cream on the side.
