Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the rice cooker instructions or on the stovetop with 1 cup of water. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled sushi rice. Let the rice cool to room temperature.

Prepare the A5 Wagyu
Slice the A5 Wagyu beef into thin pieces, approximately 1/4 inch thick. You can lightly sear the beef on each side for about 10 seconds if desired, or serve it raw.

Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of A5 Wagyu on top of the rice. Optionally, add a small dab of wasabi between the beef and rice.

Serve
Arrange the nigiri on a plate. Serve with soy sauce and sprinkle sesame seeds on top for garnish. Enjoy your A5 Wagyu nigiri!
