    Prepare the Mushrooms

    Clean the mushrooms with a damp cloth and cut them into bite-sized pieces.

    Make the Tempura Batter

    In a bowl, combine the all-purpose flour, cornstarch, salt, and minced black garlic. Gradually add the ice-cold water, mixing gently until just combined. The batter should be lumpy; do not overmix.

    Heat the Oil

    In a deep pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; it should sizzle and float.

    Fry the Mushrooms

    Dip the mushroom pieces into the tempura batter, allowing excess batter to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden and crispy, about 2-3 minutes.

    Drain and Serve

    Remove the fried mushrooms with a slotted spoon and drain on paper towels. Serve immediately with your choice of dipping sauce.
