    In a pot, bring water to a boil. Once boiling, gently add the eggs and boil for 6-7 minutes for a soft center. Remove eggs and place in an ice bath to cool. Once cooled, peel and set aside.

    In a skillet over medium heat, add sesame oil. Once hot, add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes. Add soy sauce, salt, and pepper to taste, and cook for an additional 2 minutes. Remove from heat.

    On a plate, lay down the nori sheets. Top with sautéed mushrooms, then cut the slow-cooked eggs in half and place them on top. Garnish with chopped green onions.
