    Make the Dumpling Dough

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water, mixing until a dough forms. Knead the dough for about 5-10 minutes until smooth and elastic. Cover and let it rest for 30 minutes.

    Prepare the Mushroom Filling

    In a skillet, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant. Add mixed mushrooms, soy sauce, dashi, cumin, and cook until mushrooms are tender and liquid has evaporated. Stir in green onions, season with salt and pepper, and let cool.

    Assemble the Dumplings

    Divide the dough into small portions and roll each into a circle about 3 inches in diameter. Place a spoonful of the mushroom filling in the center and fold the dough over, sealing the edges tightly. Repeat until all dough and filling are used.

    Cook the Dumplings

    Bring a pot of water to a boil. Steam the dumplings in a steamer basket lined with parchment paper for 10-12 minutes, or until the dough is cooked through.
