Preheat the Oven
Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners.

Make the Crust
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of each cupcake liner in the muffin tin.

Prepare the Filling
In a large bowl, beat the softened cream cheese until smooth. Add in the sugar and vanilla extract, and mix until combined. Beat in the eggs, one at a time, mixing well after each addition. Finally, stir in the melted chocolate until fully incorporated.

Fill the Cups
Spoon the cheesecake filling over the crust in each cupcake liner, filling them about 3/4 full.

Bake
Bake for 20-25 minutes, or until the centers are set but still slightly jiggly. Allow to cool at room temperature, then refrigerate for at least 2 hours before serving.

Top each mini cheesecake with whipped cream and chocolate shavings or chips before serving.
