Siu Mai Dumplings

    Prepare the Filling

    In a medium bowl, combine the chopped lobster meat, pork fat or ground pork, chopped shallots, minced garlic, minced ginger, soy sauce, sesame oil, and green onions. Mix well until all ingredients are thoroughly combined.

    Form the Siu Mai

    Take a wonton wrapper and place about a tablespoon of the filling in the center. Gather the edges of the wrapper around the filling, leaving the top exposed, and gently squeeze to form a dumpling. Repeat with the remaining wrappers and filling.

    Steam the Dumplings

    Prepare a steamer and bring water to a boil. Place the siu mai in the steamer basket, making sure they are not touching. Steam for about 8-10 minutes or until the dumplings are cooked through and the wrappers are translucent.

    Prepare Kimchi Gel

    In a blender, blend 1 cup of kimchi with 1/2 cup of water until smooth. Strain the mixture through a fine sieve to remove solids. In a small saucepan, heat 1/2 cup of the liquid and gradually whisk in 1 tsp of agar-agar. Bring to a boil, then lower the heat and simmer for 2-3 minutes until thickened. Pour into a container and refrigerate until set.

    Serve

    To serve, place a few siu mai on a plate with a spoonful of kimchi gel on the side. Drizzle with additional sesame oil if desired.
