Prepare the Ragu
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened.

Add the ground pork, veal, and beef to the skillet. Cook until browned, breaking up the meat with a spoon.

Stir in the crushed tomatoes, tomato paste, and red wine. Season with salt and black pepper. Simmer for about 30 minutes, stirring occasionally.

Make the Pasta
In a mixing bowl, combine the flour and a pinch of salt. Make a well in the center and add the eggs. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Roll the Pasta
Divide the rested dough into four pieces. Roll each piece out thinly using a pasta machine or a rolling pin.

Assemble the Lasagne
Preheat the oven to 180°C (350°F). Spread a layer of ragu on the bottom of a baking dish. Layer pasta sheets, béchamel sauce, and ragu. Repeat layers, finishing with béchamel and a sprinkle of Parmesan cheese on top.

Serve
Let the lasagne rest for 10 minutes before slicing. Serve warm and enjoy!
