    Prepare the Lamb

    Preheat your oven to 200°C (390°F). Season the lamb saddle with salt and black pepper. Rub with olive oil. Place in a roasting pan.

    Roast the Lamb

    Roast the lamb in the preheated oven for about 25-30 minutes for medium-rare, or until your desired doneness. Let it rest for 10 minutes before slicing.

    Prepare the Tofu

    While the lamb is roasting, press the tofu to remove excess moisture. Cut into cubes and sauté in a pan with a little olive oil until golden brown.

    Make the Yuzu Sauce

    In a bowl, mix yuzu juice with diced preserved lemon and chopped fresh herbs. Adjust seasoning with salt to taste.

    Plate the Dish

    Slice the lamb saddle and arrange on a plate. Add the sautéed tofu and drizzle with yuzu virgin sauce. Serve immediately.
