Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to the rice cooker's instructions or bring to a boil and then simmer for about 20 minutes until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature.

Prepare Nori
Cut the nori sheet into strips approximately 2 inches wide and 6 inches long.

Assemble Gunkan
Take a small mound of sushi rice and shape it into an oval or boat shape. Wrap a strip of nori around the rice, leaving one end open. Fill the open end with ikura, ensuring the roe is heaped nicely.

Serve
Serve the Ikura Gunkan with soy sauce and wasabi on the side for dipping.
