Prep the Chicken
Rinse the chicken pieces under cold water and pat them dry with paper towels. Season with salt and pepper.

Prepare the Buttermilk Mixture
In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces to the mixture and marinate for at least 1 hour, preferably overnight in the refrigerator.

Dredge the Chicken
In a separate bowl, combine the all-purpose flour, salt, black pepper, and any additional spices. Remove the chicken from the buttermilk, allowing excess to drip off, then dredge in the flour mixture, coating evenly.

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, ensuring not to overcrowd the pan. Fry for about 12-15 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
