Prepare the Rice Vermicelli
Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water, then set aside.

Cook the Prawns
In a pot of boiling water, cook the fresh prawns for about 2-3 minutes until they turn pink and opaque. Drain and let them cool.

Prepare the Filling
Gather the mint leaves, cilantro leaves, lettuce leaves, cucumber, and carrot for rolling.

Assemble the Rolls
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Lay it flat on a clean surface. Place a lettuce leaf, a small portion of rice vermicelli, a few prawns, mint, cilantro, cucumber, and carrot in the center of the wrapper.

Roll the Wrapper
Fold the sides of the wrapper over the filling, then roll from the bottom up to enclose the filling tightly. Repeat with the remaining wrappers and ingredients.

Serve
Serve the fresh prawn rolls with lime wedges and your choice of dipping sauce.
