Prepare the Duck
Preheat your oven to 225°F (110°C). Season duck legs with salt and black pepper. Place them in a baking dish and cover with duck fat. Add fresh thyme. Cover with foil and cook in the preheated oven for 3 hours until tender.

Caramelize Onions
In a skillet over medium heat, add a tablespoon of duck fat. Slice the red onions and add them to the skillet. Sprinkle with brown sugar and cook, stirring frequently, until caramelized (about 15-20 minutes).

Assemble Flatbreads
Once the duck is cooked, remove it from the oven and shred the meat from the bones. On each flatbread, layer shredded duck, caramelized onions, and pickled red cabbage.

Serve the assembled flatbreads warm, garnished with additional fresh thyme if desired.
