    Prepare the Fruit Mixture

    In a large bowl, mix the dried fruits with the brandy or rum. Let it soak for at least 1 hour, or preferably overnight.

    Mix Dry Ingredients

    In another bowl, combine the breadcrumbs, all-purpose flour, ground almonds, mixed spices, baking powder, and salt. Mix well.

    Combine Wet Ingredients

    In a separate bowl, whisk the eggs, milk, lemon zest, and orange zest together.

    Combine All Ingredients

    Add the soaked fruit mixture to the dry ingredients, followed by the wet ingredients. Mix until well combined.

    Prepare for Steaming

    Grease a 1.5-liter pudding bowl and pour the mixture into it. Cover the top with parchment paper and then with foil to secure it.

    Steam the Pudding

    Place the pudding bowl in a steamer or large pot with simmering water. Steam for about 6 hours, ensuring the water does not boil dry.

    Cool and Store

    Once steamed, let the pudding cool completely before removing it from the bowl. Wrap it tightly in cling film and store in a cool, dark place until ready to serve.

    Serve

    Reheat the pudding by steaming it again for about 2 hours. Serve warm with brandy butter.
