1. Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water until smooth. Remove from heat and let it cool slightly.
2. Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it begins to steam but not boil.
3. Mix Dry Ingredients
In a separate bowl, whisk together the sugar, cornstarch, and a pinch of salt.
4. Whisk Egg Yolks
In another bowl, whisk the egg yolks until smooth. Slowly add a small amount of the warm milk mixture to temper the yolks, whisking constantly.
5. Combine Mixtures
Pour the tempered egg yolk mixture back into the saucepan with the remaining milk and cream. Stir constantly over medium heat until the mixture thickens and coats the back of a spoon.
6. Add Chocolate and Vanilla
Remove the saucepan from heat and stir in the melted chocolate and vanilla extract until fully combined.
7. Chill the Budino
Pour the pudding into serving dishes and refrigerate for at least 4 hours or until set.
