    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot and bring to a boil. Cover, reduce heat to low, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold with a spatula to combine. Allow the rice to cool to room temperature.

    Prepare the Fillings

    Slice the avocado and daikon radish into thin strips.

    Assemble the Chirashi Maki

    Place a sheet of nori on a bamboo mat. Spread an even layer of sushi rice over the nori, leaving a small border at the top. Arrange the avocado, daikon strips, and ikura in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce, wasabi, and a sprinkle of sesame seeds.
