Prepare the Meringue
Preheat your oven to 100°C (210°F). In a clean bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to whisk until the mixture is stiff and glossy. Pipe or spoon the meringue onto a baking sheet lined with parchment paper into desired shapes.

Bake the Meringue
Bake the meringues for about 1.5 hours or until they are dry and can be lifted off the parchment easily. Turn off the oven and let them cool inside.

Prepare the Chestnut Cream
In a mixing bowl, combine the chestnut puree, vanilla extract, and powdered sugar. In a separate bowl, whip the cream until soft peaks form, then gently fold it into the chestnut mixture until well combined.

Assemble the Meringata
Layer the meringues with the chestnut cream in a serving dish or individual cups. Start with a layer of meringue, followed by chestnut cream, and repeat until all ingredients are used, finishing with a layer of chestnut cream.

Garnish and Serve
Dust the top layer with cocoa powder and refrigerate for at least 2 hours before serving. Enjoy your Chestnut Meringata chilled.
