Prepare the Custard Mixture
In a mixing bowl, whisk together the eggs, dashi stock, soy sauce, mirin, and salt until well combined. Strain the mixture through a fine sieve to ensure a smooth custard.

Steam the Custard
Prepare a steamer by boiling water in a pot. Place the filled ramekins in the steamer basket, cover with a lid, and steam on low heat for about 15-20 minutes, or until the custard is set. You can check doneness by inserting a toothpick into the center; it should come out clean.

Serve
Once cooked, carefully remove the ramekins from the steamer. Let them cool slightly before serving. Garnish with additional truffle shavings, a dollop of caviar, or finely chopped herbs if desired.
