    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Spread the cooked rice in a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Fillings

    While the rice cools, slice the avocado and cucumber into thin strips. If using imitation crab, shred it into smaller pieces.

    Assemble the Rolls

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori shiny side down on the mat. Wet your hands to prevent the rice from sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge. Place a few strips of crab, avocado, and cucumber across the middle of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge closest to you and begin to roll the sushi away from you, tucking the filling in as you go. Roll tightly but not too tight to avoid squishing the fillings. Moisten the edge of the nori with a little water to seal the roll.

    Cut the Rolls

    Using a sharp, wet knife, cut the roll into bite-sized pieces. Wipe the knife clean between cuts for neat slices.

    Serve

    Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
