1. Prepare the Duck Legs
Season the duck legs with salt and black pepper. Let them marinate for at least 30 minutes.
2. Fry the Duck Legs
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the duck legs skin-side down and fry until the skin is crispy and golden brown, about 8-10 minutes. Flip and cook the other side for an additional 5-7 minutes. Remove from skillet and drain on paper towels.
3. Prepare the Cucumber
Thinly slice the cucumber and set aside.
4. Assemble the Bao
Steam the bao buns according to package instructions. Once steamed, spread hoisin sauce and spicy chili sauce on each bun. Add a piece of fried duck leg and top with cucumber slices.
5. Serve
