Prepare the Chocolate Base

Melt Chocolate and Butter
In a heatproof bowl, combine dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth. Let it cool slightly.

Mix Wet Ingredients
In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy. Add the melted chocolate mixture and vanilla extract, mixing until combined.

Combine Dry Ingredients
In another bowl, sift together the flour and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.

Bake the Base
Pour the batter into a greased and lined baking dish. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
Prepare the Cherry Topping

Cook the Cherries
In a small saucepan, combine umeboshi cherries, honey, and water. Simmer over low heat for about 10 minutes until the cherries soften and the mixture thickens slightly. Remove from heat and let cool.
