Prepare the Beef
Season the beef fillet with salt and black pepper. In a hot skillet, sear the beef on all sides in olive oil until nicely browned (about 2-3 minutes per side). Remove from heat and let it cool. Brush the cooled beef with Dijon mustard.

Assemble the Wellington
Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping. Spread the cooled mushroom duxelles over the prosciutto. Place the beef fillet at the bottom edge and roll it tightly using the plastic wrap. Chill for 30 minutes.

Bake
Preheat the oven to 200°C (400°F). Place the wrapped Wellington on a baking tray and bake for 25-30 minutes, or until the pastry is golden brown and the beef reaches your desired doneness.

Rest and Serve
Let the Wellington rest for 10 minutes before slicing. Serve warm with sides of your choice.
