    Prepare the Beef

    Season the beef fillet with salt and black pepper. In a hot skillet, sear the beef on all sides in olive oil until nicely browned (about 2-3 minutes per side). Remove from heat and let it cool. Brush the cooled beef with Dijon mustard.

    Make the Mushroom Duxelles

    In the same skillet, add the chopped mushrooms and thyme. Cook over medium heat until the mushrooms release their moisture and become dry (approximately 10-15 minutes). Season with salt and pepper, then let cool.

    Assemble the Wellington

    Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping. Spread the cooled mushroom duxelles over the prosciutto. Place the beef fillet at the bottom edge and roll it tightly using the plastic wrap. Chill for 30 minutes.

    Wrap in Puff Pastry

    On a floured surface, roll out the puff pastry. Unwrap the beef from the plastic wrap and place it in the center of the pastry. Fold the pastry over the beef, sealing the edges. Brush the top with beaten egg.

    Bake

    Preheat the oven to 200°C (400°F). Place the wrapped Wellington on a baking tray and bake for 25-30 minutes, or until the pastry is golden brown and the beef reaches your desired doneness.

    Rest and Serve

    Let the Wellington rest for 10 minutes before slicing. Serve warm with sides of your choice.
