Preparation

    Prepare the Pudding

    Preheat your oven to 180°C (350°F). Grease a baking dish with butter. In a bowl, mash the ripe bananas until smooth.

    Mix Ingredients

    In a mixing bowl, cream the unsalted butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla extract.

    Combine Dry Ingredients

    In another bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients, alternating with the milk, mixing until just combined.

    Bake the Pudding

    Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a skewer inserted in the center comes out clean.

    Prepare the Salted Caramel

    In a saucepan, combine 200g of sugar and 100ml of water. Cook over medium heat until it turns a golden amber color. Remove from heat and carefully whisk in 100ml of cream and a pinch of sea salt.

    Once the pudding is baked and slightly cooled, slice it and serve warm drizzled with the salted caramel.
