Preparation Steps
- 1
Marinate the Chicken
In a bowl, combine the baby chicken with teriyaki sauce, olive oil, salt, and black pepper. Ensure the chicken is well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
- 2
Prepare the Vegetables
While the chicken is marinating, slice the Japanese aubergine into thin rounds and chop the red onion into wedges.
- 3
Cook the Chicken
Preheat the grill or a large skillet over medium heat. Remove the chicken from the marinade (reserve the marinade) and place it on the grill. Cook for about 20-25 minutes, turning occasionally until cooked through and juices run clear.
- 4
Sauté the Vegetables
In another skillet, heat a little olive oil over medium heat. Add the red onion and sauté for 2-3 minutes until slightly translucent. Add the Japanese aubergine and cook for another 5-7 minutes until soft. Pour in the reserved teriyaki marinade and let simmer for a couple of minutes.
- 5
Serve
Once the chicken is cooked, let it rest for a few minutes. Serve the chicken with the sautéed vegetables on the side. Garnish with sesame seeds and chopped green onions.
