Prepare the Beef

Wrap the Wagyu beef in plastic wrap and place it in the freezer for about 1 hour to firm up, making it easier to slice thinly.

Make the Truffle Ponzu

In a bowl, whisk together soy sauce, mirin, rice vinegar, truffle oil, and lemon juice until well combined. Adjust seasoning with salt and pepper to taste.

Sear the Beef

Remove the beef from the freezer and slice it into thin pieces. Heat a non-stick skillet over high heat and sear the beef for about 1 minute on each side until browned but still rare in the center.

Slice and Serve

Let the seared beef rest for a few minutes, then slice it thinly against the grain. Arrange on a plate, drizzle with truffle ponzu, and garnish with chopped chives, toasted sesame seeds, and microgreens.
