Prepare the Salmon
Marinate the salmon fillets in rum and jerk seasoning for at least 30 minutes.

Cook the Rice
Meanwhile, cook the rice according to package instructions and set aside.

Prepare the Coconut Shrimp Batter
In a bowl, combine flour, cornstarch, salt, and black pepper. In another bowl, whisk the egg. Dip shrimp in the flour mixture, then egg, and finally coat with panko breadcrumbs.

Fry the Coconut Shrimp
In a large skillet, heat olive oil over medium heat. Fry the breaded shrimp until golden brown and cooked through, about 3-4 minutes per side. Remove and set aside.

Cook the Salmon
In the same skillet, add the marinated salmon fillets and cook for about 4-5 minutes per side or until cooked to your liking.

Plate the rum-glazed jerk salmon with coconut shrimp, a serving of island rice, and sautéed vegetables.
