Preparation
1. Cook the Jasmine Rice
Rinse the Jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with 1.5 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes.
2. Prepare the Ingredients
While the rice is cooking, prepare all vegetables and chicken by slicing, dicing, and julienning them as needed.

3. Cook the Chicken
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes or until cooked through.
4. Add Vegetables
Add the broccoli, carrots, and bell peppers to the skillet. Stir-fry for another 3-5 minutes until the vegetables are tender yet crisp.
5. Add Sauce and Mandarin Oranges
Stir in the Gochujang sauce and the drained mandarin oranges. Mix well to ensure everything is coated in the sauce, cooking for an additional 2-3 minutes.
Serving
6. Plate the Dish
Serve the stir-fry over a bed of Jasmine rice. Top with shredded red cabbage, chopped green onions, crushed crispy wontons, and a sprinkle of sesame seeds.
