Caribbean Coconut Shrimp

Prepare the Shrimp
Peel and devein the shrimp, then season with salt and black pepper.

Breading
Set up a breading station with flour, beaten eggs, and coconut flakes. Dip each shrimp in flour, then egg, and finally coat with coconut flakes.

Fry the Shrimp
Heat vegetable oil in a frying pan over medium heat. Fry the shrimp for 2-3 minutes on each side until golden brown. Drain on paper towels.

Cook the Shrimp
In a skillet, cook the shrimp over medium heat until pink, then add the glaze and cook for another 2 minutes, stirring to coat.
Jerk Seasoned Tilapia

Marinate the Tilapia
Rub jerk seasoning over tilapia fillets. Drizzle with olive oil and lime juice. Let marinate for 15 minutes.

In a saucepan, combine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
