Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin strips to form fries.
Soak the Fries
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.
Season the Fries
Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, black pepper, and chili powder. Toss to coat evenly.
Garnish and Serve
Transfer the seasoned fries to a serving platter, garnish with chopped fresh cilantro, and serve with lime wedges on the side.
