Cooking Instructions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Chicken
In a large skillet, heat the olive oil over medium heat. Season the chicken breast with salt and black pepper, then add it to the skillet. Cook for about 6-7 minutes on each side or until fully cooked. Remove from the skillet and let it rest before slicing.
- 3
Sauté the Vegetables
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then add the broccoli florets and red bell pepper. Cook for 3-4 minutes until they begin to soften. Add the spinach and cook until wilted.
- 4
Make the Sauce
Lower the heat and add the pesto sauce and heavy cream to the skillet, stirring to combine. Let it simmer for 2-3 minutes.
- 5
Combine Everything
Add the cooked penne pasta and sliced chicken to the skillet. Toss everything together until well coated with the sauce. Adjust seasoning with salt and pepper as needed.
- 6
Serve
Serve the Rasta Pasta hot, garnished with grated Parmesan cheese.
