    Prepare the Potatoes

    Peel and chop the red skinned potatoes into even chunks. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Set aside.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Season the NY strip steaks with salt and black pepper. Add olive oil to the grill or skillet. Cook the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

    Prepare the Vegetables

    In a separate skillet, add a tablespoon of olive oil and heat over medium. Add seasonal vegetables and sauté for about 5-7 minutes until tender but still crisp. Season with salt and pepper to taste.

    Serve

    Plate the mashed potatoes, place the steak on top, and arrange the sautéed seasonal vegetables on the side. Enjoy your Primal Steak!
