Prepare the Fish

Pat the fish fillets dry with paper towels. Season both sides with blackening seasoning, salt, and pepper.

Cook the Fish

Heat a grill or skillet over medium-high heat. Add olive oil. Once hot, add the seasoned fish fillets. Cook for about 3-4 minutes per side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest.

Warm the Tortillas

In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos

To each tortilla, add a layer of black beans, followed by the blackened fish, shredded red cabbage, jalapeño ranch dressing, and pico de gallo. Squeeze lime juice over the top.

Serve

Serve the tacos immediately with additional lime wedges on the side for extra flavor.
