Prepare the Chicken
In a bowl, season the chicken breasts with Cajun seasoning, salt, and black pepper. Make sure the chicken is evenly coated.
Cook the Chicken
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from skillet and let rest for 5 minutes before slicing.
Assemble the Quesadillas
In a large skillet, add 1 tablespoon of olive oil over medium heat. Place one tortilla in the skillet, sprinkle half of the Monterey Jack and cheddar cheese on one half of the tortilla. Add sliced chicken and a generous spoonful of pico de gallo on top of the cheese. Fold the tortilla in half.
Cook the Quesadillas
Cook the folded quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining tortillas and filling.
Serve
Cut each quesadilla into wedges and serve hot with additional pico de gallo on the side.
