Frying Shrimp

    Prepare the Shrimp

    In a bowl, season the shrimp with salt and black pepper. Set aside.

    Coating Process

    Set up a breading station with one bowl for coconut flour, one for beaten eggs, and one for shredded coconut. Dip each shrimp first in the coconut flour, then in the eggs, and finally coat with shredded coconut.

    Fry the Shrimp

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the coated shrimp in batches until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

Making Coleslaw

    Mix the Coleslaw Ingredients

    In a large bowl, combine the shredded cabbage and grated carrots. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until serving.

Preparing Plum Sauce

    In a small saucepan, combine the plum preserves, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir over medium heat until heated through. Remove from heat and let cool.

Making Safari Fries

    Prepare the Fries

    Preheat the oven to 425°F (220°C). In a large bowl, toss the potato wedges with olive oil, paprika, salt, and black pepper.

    Bake the Fries

    Spread the seasoned potato wedges on a baking sheet. Bake for 25-30 minutes or until crispy and golden brown, flipping halfway through.
