Preparation Steps
Prepare the Chicken
In a large bowl, marinate the chicken thighs in buttermilk for at least 1 hour or overnight in the refrigerator.
Prepare the Slaw
In another bowl, combine shredded cabbage, carrots, and red bell pepper. In a separate bowl, whisk together coconut milk, curry powder, lime juice, honey, and salt. Pour over the vegetable mixture and toss to combine. Refrigerate until ready to use.
Fry the Chicken
In a mixing bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Remove the chicken from the buttermilk and dredge in the flour mixture. Heat vegetable oil in a large skillet over medium-high heat and fry the chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.
Assemble the Sandwich
Toast the burger buns lightly. Place a piece of fried chicken on each bun, drizzle with hot honey, and top with coconut curry slaw. Close the buns and serve immediately.
