Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the chicken or shrimp into bite-sized pieces. Slice the chorizo into rounds. Chop the bell peppers and onion, and mince the garlic.

Cooking the Pasta

  1. 2

    Cook the Pasta

In a large pot of boiling salted water, cook the fettuccine or penne pasta according to package instructions until al dente. Drain and set aside.

Cooking the Sauce

  1. 3

    Cook the Protein and Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Add the chicken or shrimp and cook until fully cooked, about 5-7 minutes more. Remove from the skillet and set aside.

  2. 4

    Sauté the Vegetables

In the same skillet, add the chopped onion, bell peppers, and minced garlic. Sauté until the vegetables are tender, about 3-4 minutes.

  3. 5

    Make the Cajun Cream Sauce

Add the heavy cream and Cajun seasoning to the skillet, stirring to combine. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

  4. 6

    Combine Everything

Return the cooked chicken/shrimp and chorizo to the skillet, then add the cooked pasta. Toss everything together to coat in the sauce. Cook for an additional 2-3 minutes to heat through.

Grilling the Bread

  1. 7

    Prepare and Grill the Bread

Preheat a grill or grill pan over medium heat. Slice the baguette or Italian bread in half lengthwise. Mix the butter and garlic powder together, then spread it on the cut sides of the bread. Place the bread on the grill, cut-side down, and grill for 2-3 minutes until toasted.

Serving

  1. 8

    Serve the Dish

Plate the wicked pasta and serve immediately with grilled garlic bread on the side. Enjoy!
