Preparing the Salmon

Soak the Cedar Plank

Soak the cedar plank in water for at least 1 hour before grilling to prevent it from burning.

Prepare the Marinade

In a bowl, mix the minced garlic, whole grain mustard, olive oil, salt, and black pepper. Coat the salmon fillets with this marinade and let them sit for 30 minutes.

Preheat the Grill

Preheat the grill to medium-high heat.

Grill the Salmon

Place the soaked cedar plank on the grill. Once it starts to smoke, place the marinated salmon fillets on the plank. Close the grill lid and cook for 20 minutes or until the salmon is cooked through.

Making the Squash Succotash

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add diced red onion and sauté until translucent, about 3 minutes.

Add Remaining Vegetables

Add diced zucchini, yellow squash, red bell pepper, and corn kernels. Season with salt and black pepper. Cook for an additional 7-10 minutes, stirring occasionally, until the vegetables are tender.

Preparing the Red Beans & Rice

Cook the Aromatics

In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until the onion is soft, about 5 minutes.

Add Beans and Seasoning

Stir in the red beans and Cajun seasoning. Cook for 5 minutes until heated through and well combined.

Combine with Rice

Mix in the cooked rice, stirring until everything is combined. Season with salt and black pepper to taste. Cook for another 2 minutes to heat through.
