Omelet Preparation

    Prepare the Ingredients

    Clean and slice the portabella mushrooms. Remove the casing from the chorizo and crumble it into small pieces.

    Cook the Chorizo and Mushrooms

    In a non-stick skillet, heat the olive oil over medium heat. Add the chorizo and cook for about 5 minutes until browned. Then add the sliced portabella mushrooms and cook for an additional 3-4 minutes until they are tender.

    Prepare the Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    Pour the egg mixture over the cooked chorizo and mushrooms in the skillet. Cook on medium-low heat until the edges start to set. Using a spatula, gently lift the edges to allow uncooked egg to flow underneath. Cook until the top is mostly set but still slightly runny.

    Add Fresh Parsley

    Sprinkle fresh parsley over the omelet before folding it in half. Cook for another minute to allow the omelet to finish cooking through.

Smoked Tomato Jack Sauce Preparation

    Combine the Sauce Ingredients

    In a small saucepan, combine the tomato sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to combine.

    Heat the Sauce

    Place the saucepan over medium heat and bring the sauce to a gentle simmer. Allow it to cook for about 5-7 minutes, stirring occasionally.

    Add Cheese

    Once the sauce is simmering, gradually stir in the shredded Monterey Jack cheese until melted and smooth. Adjust seasoning to taste.

    Pour the smoked tomato jack sauce over the prepared portabella and chorizo omelet. Serve immediately.
