Method

Preparation of Rice

    Cook the Brown Rice

    In a medium pot, combine 1 cup of brown rice and 2 cups of water. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover, and let simmer for 45 minutes or until all the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Salad Preparation

    Prepare the Green Beans

    Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes. Once done, transfer them to an ice bath to cool quickly, then drain and set aside.

    Prepare the Cantaloupe

    Cut the cantaloupe in half, scoop out the seeds, and then slice into bite-sized cubes.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Shrimp and Fish

    In the same skillet, add the shrimp and mixed fish. Cook until the shrimp turn pink and opaque, and the fish is cooked through, about 5-6 minutes. Remove from heat.

    Chop the Vegetables

    Dice the bell pepper, onion, and tomatoes into small pieces.

Assembly

    Combine All Ingredients

    In a large bowl, combine the cooked brown rice, blanched green beans, cantaloupe, cooked chorizo, shrimp, mixed fish, and diced vegetables. Toss gently to mix.

    Serve the mixed field greens chilled or at room temperature. Enjoy!
