Method
Prepare Sticky Rice
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or preferably overnight.
- 2
Steam the Rice
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice for about 25-30 minutes, or until it becomes tender and sticky.
Prepare Coconut Sauce
- 3
Make Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt. Cook over medium heat, stirring occasionally, until the sugar dissolves. Do not let it boil.
- 4
Combine with Rice
Once the rice is cooked, transfer it to a bowl and pour about half of the coconut sauce over the hot rice. Stir gently to combine and let it sit for about 15 minutes to absorb the flavors.
Prepare Mango
- 5
Slice the Mango
Peel the ripe mangoes and slice them into thin strips or wedges.
Serve
- 6
Plate the Dish
Serve the sticky rice on a plate or in a bowl. Top with the sliced mango and drizzle the remaining coconut sauce over the top.
- 7
Garnish
Sprinkle sesame seeds or mung beans on top as a garnish if desired. Serve warm or at room temperature.
