    Prepare the Ingredients

    Dice the chicken thighs into bite-sized pieces. Slice the chorizo sausage into rounds. Chop the mushrooms, bell peppers, onion, and garlic.

    Cook the Rice

    In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and water is absorbed.

    Cook the Chicken and Chorizo

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken thighs and chorizo sausage. Season with paprika, salt, black pepper, and cayenne pepper. Cook for 6-8 minutes until the chicken is browned and cooked through.

    Add Vegetables

    Add the chopped onion, garlic, mushrooms, and bell peppers to the skillet. Sauté for 5-7 minutes until the vegetables are softened.

    Make the Sauce

    Stir in the chicken broth and bring to a simmer. Reduce heat and add the smoked tomato jack cheese and heavy cream. Stir until the cheese has melted and the sauce is creamy.

    Combine and Serve

    Once the rice is cooked, fluff it with a fork. Serve the chicken and vegetable mixture over the rice, ensuring to spoon plenty of the smoked tomato jack sauce over the top. Sprinkle with dried thyme before serving.
